Description
Steamed egg with mushrooms (蒸蛋)
- a very simple Chinese recipe, ideally a starter, snack or side dish.
Serves 2-3
Ingredients
4 eggs
1 cup of water
As many mushrooms as you can stomach (and fit in your bowl)
Light soy sauce, sesame seed oil and fried shallots (onions) to taste. Quantities given above are a suggestion.

Notes:
It muchly resembles the Japanese steamed egg 'Chawwanmushi', however my mother does not like the usual Japanese seafood ingredients with egg and is obsessed with fried shallots and mushrooms instead. Here I have used two kinds - Saffron Milk Caps and Shiitake mushrooms. But this is a very basic variant - feel free to try out different mushrooms, chicken, minced meat, seaweed, shrimp, chilli, gingko nuts etc etc etc, as well as other spices. You can also garnish with a sprinkling of chopped spring onion and/or coriander.
It is a light, warm and nutritious dish that goes well with vegetables and rice, or by itself as a snack.
